Barbecue Baked Potatoes
Pat: Brushed with butter, rubbed with spices, and dressed the way you want it, our barbecue baked potatoes (which are essentially baked potatoes loaded with toppings) will make your stomach skip a beat. These are fun to make with your kids, because they can dress up their taters with all kinds of goodness—meat, sour cream, shredded cheese, chives, and so forth. Depending on what stuff and how much of it you load onto each potato, these can serve as a side dish or an entire meal. For a healthier spud, Gina follows this recipe with a lightened-up twice-baked tater that is just as tasty as my belt-busting variety.
Glazed Autumn Root Vegetables
Gina: This simple, beautiful braise of sweet root vegetables and shallots is a perfect complement to any roasted meat (a Thanksgiving turkey, Cornish hens, and pot roast come to mind). For the deepest, richest flavor, be sure to get a good brown color on the vegetables before adding them to the chicken stock. We finish the dish with sage and parsley, but any number of fresh herbs will do the trick, including rosemary, thyme, or oregano.
Cheesy Potato Casserole
Pat: Good old mashed (or fried) potatoes are an everyday event in the South, but there’s something about a casserole of cheesy scalloped potatoes that makes a meal more special. After experimenting with countless variations, we decided that this two-cheese version was our favorite. You’ll love how the sharp cheddar mingles with the blue cheese, and how the finished casserole has a crispy top and a tender, creamy middle. This dish has become a Neely holiday staple, especially at Thanksgiving, because it’s delicious with turkey and buttered green beans.
Cane Syrup–Glazed Sweet Potatoes with Marshmallow Streusel
Pat: Gina’s grandmother loved cane syrup, which is a sorghumlike syrup that has a deep bittersweet flavor. If you can’t find cane syrup, use an equal amount of dark-brown sugar plus 2 tablespoons molasses. This dish gives a new twist to a classic Thanksgiving side. The gooey marshmallows and brown sugar keep the kids happy, while the “big kids” will love the addition of orange liqueur, warm spices, and pecans.
Smoky New Potatoes and Green Beans
Gina: Green beans and new potatoes, simmered with some type of pork fat, are a classic Southern combination. This dish is one we both grew up on, and when we cook it at home, the smoky aroma of these simmering vegetables instantly transports us to our mothers’ kitchens. There are few flavors more satisfying to any Southerner than the taste of tender new potatoes and green beans that have absorbed the salty, porky goodness of a smoked ham hock.
Braised Cabbage and Carrots
Gina: This simple, satisfying braise is another Neely staple. After a bit of knife work in the beginning, most of the cooking is unattended, and I love the aroma of bacon and cabbage while I set the table or simply hang with a glass of wine and my girls. Baby carrots add a contemporary twist to this otherwise old-fashioned dish, and they’re a nice color accent for the cabbage. Homemade Smash Seasoning and fresh parsley have the effect of punching up the flavors.
Grilled Lemon Chicken Salad with Potatoes and Pistachios
A plain old grilled chicken breast can be a bit uninspired, so we like to jazz up our breasts (who said that?) in this version of grilled chicken salad that has plenty of moxie. The marinade of fresh lemon juice and zest, olive oil, and fresh herbs infuses the chicken with a bright, sunny flavor (so yummy that you’ll want to use the marinade again and again for grilled meats). Here we team the grilled chicken with potatoes, celery, green olives, pistachios, and a creamy mayonnaise dressing for an over-the-top texture-and-flavor combination. This recipe doubles or triples beautifully, so it’s great for special lunches (think birthday parties, anniversaries, or bridal showers). It’s also great with a glass of chilled white wine and a crackly baguette.
Sautéed Kale with Onion and Bacon
Gina: Some Southern greens benefit from long, slow cooking, but kale is best prepared as a speedy sauté. Shredding the kale allows it to cook even faster, keeping its bright color and abundant nutrients (calcium, vitamins A and C) intact. Adding bacon, onion, and the unexpected flavor of smoked Spanish paprika creates a spectacular side dish that just might steal the show from the main course. For a quick, satisfying dinner, you could also toss this sauté with whole-wheat pasta, and finish the dish with toasted pine nuts and grated Parmesan cheese.
Grandma Jean’s Potato Salad
Gina: Wow, life sure has a way of kicking you in the stomach when you least expect it. Ladies, I am sure you will understand what I’m talking about. You know that person who’s been in your life all along and you’ve never really seen him? That’s how it was with Pat and me. His mom and my mom went to school together, his brothers and my sisters were classmates, and, yes, you guessed it, we went to the same high school. . . . Sometimes the best things in life are right in front of you (if you keep your eyes open). That’s how I feel about my mom’s potato salad. She always made it for us when we were kids, but I didn’t truly appreciate it until I moved away. What is it they say about absence and the heart? That’s when I knew I had to master this recipe on my own. The first time I prepared it for Pat, he recognized that this was one apple that hadn’t fallen far from the tree. This potato salad remains a standout at all of our big family gatherings. Even if Mom can’t make it to an event, her potato salad will always be there! I think the creamy red potatoes, sweet-pickle relish, and sharp yellow mustard give this salad a distinct flavor and an appetizing color. Pat loves the richness that the big chunks of hard-boiled egg provide (and the way a little sugar brings out the flavors of the other ingredients).
Hearty Beef Stew
Pat: My brothers and I have always been good eaters. As you can imagine, this meant a lot of work for our momma—feeding five hungry boys was no easy task. We all played football, and would come home after practice absolutely ravenous, ready to eat everything in the house. Lucky for us, she specialized in hearty dishes like spaghetti, lasagna, pot roast—and this rich stew. Packed with vegetables, tender beef, and a savory broth, it managed to satisfy my brothers and me . . . at least for a few hours. When the first fall chill sets in, I find myself drawn back to Momma’s cooking, so this stew remains a Neely staple (these days, however, we make it with more red wine). It’s a great weekend recipe, when you’ve planned a day of projects around the house, because it requires only a bit of up-front work—then you get to enjoy the intoxicating smell of the stew as it simmers. Although I live in a home with three girls, don’t be fooled: They hold their own when it comes to projects and this stew (they can polish off plenty of both). As Gina says, “Everyone has an inner pig that needs to be set free once in a while.”
Spinach Salad with Bacon, Blue Cheese, Pecans, and Cranberries
Gina: Ours is a spinach salad with some serious attitude. In addition to the bacon and creamy blue cheese dressing, we add sweetened pecans and tart dried cranberries, and the overall effect is to give this salad a festive feel. It’s a great dinner party starter, and it’s especially good partnered with a fat grilled steak. The spiced pecans are good enough to eat on their own as a snack, but try to save them for the salad! And even though we call for dried cranberries, you can substitute a variety of dried fruit, including dried cherries or golden raisins.
Vegetarian Chili
Gina: Every once in a while, my girls and I get on a little veggie kick, and they convince me to take a break from meat (amazing what a cheerleader uniform—theirs, not mine, hon—can do to you). This hearty, spicy chili is so satisfying that even Pat—my steak-and-potatoes man—loves it. The secret ingredient, bulgur (also called cracked wheat), thickens the stew when cooked and helps create a “meaty” texture. The addition of canned fire-roasted tomatoes and an unusual mix of spices gives this chili an exotic aroma and plenty of depth. More often than not, this chili is a family affair—Spenser and Shelbi help me cut up all the colorful vegetables and tell me about their respective days, while Pat makes the cornbread that goes so well with the stew, sets the table, and privately mourns the meat that he will not be having for dinner!
White Bean Soup with Kale
Pat: Creamy, smoky white beans, simmered with some kind of pork fat, are a Southern staple, especially when served with a wedge of warm cornbread. This white-bean soup is finished with kale, a nourishing green that’s packed with vitamins A and C (the leaves are so pretty that Gina uses the green and purple varieties to decorate her party trays). Smoked sausage makes a great addition to this soup, and what we do then is leave out the bacon and add 1/2 pound of sliced smoked sausage instead. (You’ve heard the expression “an eye for an eye” in Memphis we say “a pig for a pig.”)
Silky Carrot Soup
Pat: When Gina and I are on a fitness kick and determined to lose a few pounds, I love having healthy, vibrant vegetable soups on hand. The soups help us fight the flab without sacrificing taste. And they fill us up, too! We often serve soup as a nourishing lunch or first course, and this carrot soup is one of my favorites. It has a velvety texture and an orange color that pops, and it includes a secret ingredient (sweet potato) and warm spices like cumin, coriander, and cayenne to give it depth and an irresistible aroma. Puréeing this soup in a blender instead of a food processor makes it especially silky. It’s great hot, but it’s also good chilled, topped with a swirl of plain yogurt or sour cream, during our sultry Memphis summers.
Spicy Tomato Soup with Avocado Relish
Pat: This is our kind of tomato soup—it has plenty of attitude! A double dose of heat (crushed red-pepper flakes and chipotle-pepper purée) gives it a smoky undertone; a garnish of avocado relish balances the flavors and provides an appealing texture. This soup is delicious with hot cornbread or grilled ham-and-cheese sandwiches.
Spicy Corn Chowder
Pat: This creamy corn chowder, packed with vegetables and spices, has more sass than your average chowder (and the sweet potato and spices give it a distinct orange hue). The ingredients smoky bacon, fresh herbs, and a little Neely kick (cayenne pepper) combine for an over-the-top, out-of-this-world chowder flavor. When corn is at its peak, during the summer, we use fresh kernels straight from the cob. But since we crave this soup all year long, we use frozen corn as well and get great results. If you use frozen corn, look for the white kernels—they are particularly sweet.
Florida Coast Pickled Shrimp
Gina: We’ve taken a few memorable family vacations to the Gulf Coast of Florida, which is a great place to indulge our passion for the beach and fresh shrimp. These pickled shrimp are perfect for entertaining, because they are actually best made a day in advance. They’re delicious on their own, or eaten with buttered slices of French bread.
Potato Croquettes
This is the side dish to make when you find yourself with leftover mashed potatoes. (If you are using leftover mashed potatoes, use your judgment about the ingredients you want to add, since the mashed potatoes may be flavored already.) It also makes a wonderful dish for entertaining—everyone loves them, and you can keep them warm in an oven up to 30 minutes after you make them.
Warm Potato, Onion, and Caper Salad
Try this salad as it was made traditionally, without vinegar. If you feel the capers don’t supply the necessary zing, sprinkle a little wine vinegar over the salad and toss it again. Warm salads like this take the chill out of a cold-cut lunch and go very well alongside grilled fish, chicken, or sausages.
