Beet Salad with Cumin
This salad is a popular item on the Sabbath table of Moroccan Jews. It’s at its best after sitting in the dressing for a couple of hours; in fact, you can store it for up to a week in the refrigerator.
Pickled Beets
This dish is served everywhere in Scandinavia and for a long time was a staple of restaurants throughout North America—though it seems to be disappearing along with the relish trays and the family restaurants that featured them.
Beet Salad with Horseradish
Beets are earthy and sweet; horseradish is earthy and seismic; the combination is fortuitous. Fresh horseradish is best, but you can substitute prepared horseradish if necessary (make sure the jar hasn’t been opened for too long, or the horseradish will have lost its intensity). This salad is best after marinating in the refrigerator for a day or two, so prepare it ahead of time if you think of it.
Ginger-Scallion Dipping Sauce
A popular accompaniment for White Cut Chicken (page 273), this is also good stirred into soups.
Cucumber, Jicama, and Fruit Salad
The spicy sweetness of this Mexican salad is super-refreshing and delicious as long as you have ripe fruit; vary the ingredients depending on what you find. Really, any fruit is suitable, from oranges and apples to pineapples and papayas; peaches and melons are wonderful summer options.
Ginger-Chile Sauce
A good all-purpose fresh chile sauce, one that will keep for a couple of weeks in the refrigerator. Hot but flavorful; great for bland foods, such as Hainanese Chicken Rice (page 275).
Toasted Chile Sauce
Still fiery, but mellower than raw chile sauces (and, of course, somewhat more work). Incredible on grilled chicken. This will keep fairly well, but because of the lime juice it is definitely at its best when fresh; thus I keep the quantity small. Information on Asian fish sauces like nam pla is on page 500.
Raita
Raita is salad, relish, dip, and side dish in one. Yogurt-based, it usually includes something sharp to balance the sour blandness: onion, spices, mustard, even chiles. (It’s most closely associated with India, but similar mixtures are made in the Middle East.) The recipe here is the basic foundation of many raitas and is usually not eaten as is but added to according to preference. There are infinite variations, of which the ones that follow are among the most popular. All balance spicy curries well but are also good eaten on their own or as a dip for flatbreads, like those on pages 559–565.
Fennel and Orange Salad
A superrefreshing salad, great on hot summer days. If you have a mandoline, use it here, since the fennel is best when cut into thin slices. This salad can be made more substantial with cooked scallops, shrimp, or crabmeat and is also delicious with grapefruit. Peel the fruit over a bowl to catch the juices, then cut the segments between the membranes.
Sweet Garlic Soy Sauce
In Philippine cuisine, dark, fairly harsh soy sauce is favored, but it’s often combined with sugar to create a syrupy dressing for vegetables. The added garlic gives this sweet and salty sauce a pleasant kick.
Radish Salad
The peppery bite of radishes is the featured player in this crunchy salad, which is served all over the Arab world in one form or another. Salting the radishes first improves both flavor and texture, but if you’re pressed for time, just salt the salad as you normally would.
Hot Curry Powder
Curry powder may be hot, mild, or fragrant; it’s usually blended to the producer’s taste, and if you make it often enough, you’ll find exactly what you like. Here the heat comes from a combination of black pepper and chiles. But the heat is usually moderate and well tempered by the other spices. If you like a milder, sweeter curry powder, see the next three recipes.
Leek Salad
This North African salad will give you a wonderful new perspective on leeks. Uncooked, they are deliciously refreshing, especially when paired with tomatoes and cucumbers.
Milder Curry Powder
This curry still carries a bit of heat but is mild and fragrant. If I were looking for an all-purpose curry powder, this would be it.
Garam Masala
Generally speaking—but not always—garam masala is milder than curry, containing little or no pepper or chile. Again, it’s a matter of taste. This garam masala has a load of cardamom in it, because that’s the kind I favor. It’s delicious with fish.
Cabbage and Beet Salad
Beet salads in general are wonderful, but this one is a refreshing change. For one thing, the beets are raw. For another, their sweetness is offset by the sharp taste of raw cabbage; it’s a fine if odd marriage. Think of it as Swedish coleslaw (like coleslaw, it can be made a few hours in advance). Whenever you peel beets—and especially when you’re grating them—be sure to wear an apron or clothing you don’t care about.
Parsley-Onion Condiment
Here’s a “Why didn’t I think of that?” concoction that’s added to many plates—and sometimes simply set on the table as a condiment—throughout the Middle East. Fresh and delicious, it’s often made with mint instead of parsley or shallot in place of onion. Serve with any grilled meat, but especially Kofte (page 355).
Vegetable Stock
This vegetable stock is not unlike Jus Rôti (page 163) but without the meat—the roasting step adds a layer of flavor that is a welcome addition to otherwise one-dimensional vegetable stocks. Although this is hardly a bare-bones stock, the addition of mushrooms or more root vegetables (especially parsnips) will give it even more oomph.
Onion Kulcha
Kulcha are like doughier, softer paratha and are absolutely delicious. Combined with basmati rice, dal (page 433), and an Indian vegetable dish, like the cauliflower on page 451 or the eggplant on page 457, kulcha are a perfect centerpiece for a vegetarian meal. Chaat masala is a deliciously sour-tasting spice mix you can buy at Indian markets (it’s possible to make it yourself, but almost no one does).
Aloo Paratha
Not to put too fine a point on it, but this is one of my favorite foods ever. Fifteen years ago, Julie Sahni, the great Indian cook and cookbook writer (her Classic Indian Cooking remains the best book on the subject published in the States), showed me how to make aloo paratha. I continued to follow her recipes for years and never ate a better one until I traveled to India (and even then I may have been influenced by the atmosphere, a truck stop near a mountaintop fort). This is essentially Julie’s recipe, with a few changes I’ve incorporated over the years. Cooked paratha will keep at room temperature for up to twenty-four hours and can be served without reheating or can be reheated quickly in a dry skillet or even a microwave. But there is nothing like one fresh from the skillet. Ajwain comes from carom seeds, which look like celery seeds but taste like very strong, slightly coarse thyme.
