Wild Striped Bass with Farro, Black Rice, Green Garlic, and Tangerine
The first incarnation of this dish did not include rice. Tasting it over and over again, I knew it needed a final element that would bring its flavors into harmony: nutty farro, meaty bass, pungent green garlic, sweet pea shoots, tart tangerines. I racked my brain for just the right thing, then remembered a sample of black rice I had stashed in my desk drawer weeks before. I had little experience with black rice—varieties of rice whose kernels are covered by extremely dark bran. The black rice I found was grown in the salt marshes of the Veneto, so I cooked it in an Italian style. As I would for risotto, I sautéed the rice in olive oil to seal the outer layer and toast it slightly. Then I deglazed with white wine, added water, and let it simmer away. When the rice was done, I found it solved my problem perfectly. The rice’s marshy origins gave it a subtle oceany taste, complementing the fresh fish and giving the entire dish a springtime-by-the sea coherence. What’s more, there was a visual bonus: the black rice was gorgeous to behold, coated in its own deep purple sauce.
Dungeness Crab Salad with Avocado, Beets, Crème Fraîche, and Lime
Dungeness crabs are caught off the Pacific coast, from the tip of Alaska to as far south as Baja California, during the cold-water months of November to early June. If you’re not on the West Coast or can’t find Dungeness crabs, look for stone, peekytoe, or blue crabs. And if you’re short on time, purchase the crabs already cooked, cracked, and cleaned from a good fishmonger. If you’re feeling less extravagant or can’t get to the fish market, a crabless version of this dish makes a pretty good salad, too.
Buttered Cockles with Peas, Pea Shoots, Green Garlic Champ, and Brown Scones
One year while researching ideas for our St. Patrick’s Sunday supper, I discovered that the Irish obsession with potatoes is not a myth. Page after page of old Irish “cookery books” reveal numerous formulas for the tuber, with whimsical names for each. I fell for champ, an Irish version of mashed potatoes flavored with a handful of finely sliced scallions. Since it was spring, I skipped the scallions and used lots of sliced green garlic instead. But the Irish don’t live on potatoes alone; seafood is actually the backbone of their diet. So I decided to celebrate their patron saint with something from the sea. I found lots of recipes for fish as well as tiny clams known as cockles. Trying to bring these Irish specialties together, I steamed the cockles with white wine and butter and then spooned them over the creamy green garlic champ. And what more Irish way to sop up those briny juices than with a savory brown scone?
Swiss Chard Tart with Goat Cheese, Currants, and Pine Nuts
Look in any Sicilian cookbook and you’ll find a recipe for the popular side dish, or contorno, of cooked greens with currants and pine nuts. I make Swiss chard the main attraction of this dish, layering it onto a savory tart with rich and tangy goat cheese, then topping it with sweet currants and toasted pine nuts. Use a crumbly, slightly aged goat cheese, such as Bûcheron, Rodin Affiné, or the domestically produced Laura chanel aged chèvre. Feel free to substitute any other tender greens, such as the tops of beets or turnips, or a bunch of young mustard greens for the Swiss chard.
Honey-Glazed Parsnips
To bring out the best in this snowy white root vegetable, I simmer it in honey and citrus. A little heat balances the luscious sweetness.
Sweet and Sour Cabbage
Served under Soy-Syrup Roasted Duck (page 142), this super-tender cabbage perfectly balances the richness of the meat. But I love it so much, I eat it on its own, too. As always with fresh cabbage, I add the juniper berries at the end to lightly perfume the dish.
Cumin and Citrus Roasted Carrots
Blanching the carrots before roasting them makes a huge difference. Not only are they more flavorful, they also become juicy and tender after roasting. Coating them with a fragrant spice paste and cooking them along with fresh citrus infuses them with an intoxicating blend of flavors.
Herbed New Baby Potatoes
I roast my potatoes with garlic and herbs, so why not do the same when boiling them? I discovered that the aromatics really infuse the potatoes when you start them together in cold water and then heat them to boiling.
Glazed Fresh Peas and Carrots with Mint and Dill
In spring, garden peas and young carrots need little embellishment to taste amazing. It’s all about the execution. You want them just tender, but not crunchy. And you use only a little butter here—just enough to make the vegetables glisten.

Enjoy this alsatian specialty with some good beer. I like making this with crunchy, bright, and tart fresh sauerkraut, which my mom brings me from France. It’s also delicious with regular sauerkraut. I love how the meat juices infuse the cabbage and potatoes for a satisfying one-pot meal.
Mussels with Fennel Duo
With both fennel seeds and fresh fennel, you get an intensely fragrant dish. I can’t think of a simpler or faster dinner. With good crusty bread for soaking up the juices and a simple salad, you’re all set. Look for small Prince Edward Island mussels—they’re my favorite.
Herbed Sea Bass and Potatoes in Broth
Here I combine woody herbs with the potatoes and tender herbs with the fish. The result is an intensely flavorful and fragrant dish.
Red Snapper, Corn, and Baby Potatoes with Green Olive Vinaigrette
Super-savory green olives form the base of an amazing vinaigrette that brings out the sweetness of snapper and late-summer corn and potatoes.
Roasted Whole Sea Bass with Fennel, Meyer Lemons, and Cherry Tomatoes
Any fish on the bone works here—whole red snapper or salmon steaks would also be good choices—but I especially love just-caught sea bass. Set on a bed of fennel and smothered with tart-sweet Meyer lemons and cherry tomatoes, the fish absorbs all those flavors while it steam-roasts in dry white wine. I love the distinctive citrus aroma of Meyer lemons, but you can use regular lemons here, too.

For years, I’ve made smooth pureed pea soups; they’re always a hit at my restaurants. Recently, I was inspired by my mom to try something new. While visiting New York with my dad, she made a chunky pea and carrot stew with slab bacon and cabbage. I decided to go vegetarian here—doing away with even the chicken stock and creating a tea-like herb infusion instead—and to puree only part of the ingredients, making a light pureed soup with whole peas and sliced carrots scattered throughout. The result is a bowl of spring.
Warm Alsatian Potato Salad
This is the type of salad my mom used to make—unfussy and delicious. It’s best with fresh spring potatoes and onions, but it hits the spot any time of year. While I love drinking dry white Alsatian whites, I enjoy making this salad with a good Sancerre.
Carrot and Avocado Salad with Crunchy Seeds
This is easily one of my favorite fall salads. The creaminess of avocado and sour cream is amazing with the spiced zing of the carrots and the toasted, nutty seeds.
Greek Salad with Roasted Beets, Olives, and Feta
I crave Greek salad year round, so in the winter, when tomatoes don’t taste great raw, I make it with roasted beets instead. This began as a home lunch, but I decided to try it out at some of my restaurants, too, and it’s turned out to be one of our most popular salads.
