Soffritto

Soffritto is a combination of sautéed onions, celery, and carrots, and it is the base of much Italian cooking. We start many of our dishes by sautéing these ingredients, and then we have this, a very dark soffritto, that we cook for four hours, after which the vegetables are transformed into a rich, thick paste. We make the soffritto in big batches and use it as a starting point for many of our ragùs, such as the duck ragù (see Gnocchi with Duck Ragù, page 187), the wild boar ragù (see Maltagliati with Wild Boar Ragù, page 185), and the ragù bolognese (see Garganelli with Ragù Bolognese, page 189). We also use it to make a rich contorni—Yellow Wax Beans Stracotto in Soffritto with Salsa Verde (page 260)—that we serve in the Osteria. This soffritto might seem oily, but don’t let that scare you as it’s used to start dishes where olive oil would normally be used. At the restaurant, we chop the carrots and celery in a food processor, but we chop the onions by hand to avoid their becoming a watery purée.

Basic Chicken Stock

This is a neutral chicken stock that doesn’t contain any seasonings other than peppercorns. We keep it simple because we use it in a variety of dishes, each of which will contain its own seasonings. We go through an astonishing amount of this stock and as you cook from this book, you will, too.

Court Bouillon

Court bouillon, the vegetable and herb broth traditionally used for poaching fish, imparts subtle flavor to the fish as it cooks. The bouillon can be made 2 or 3 days ahead. If preparing the fish the same day, make the bouillon right in the poacher.

Warm Cheese and Glazed Pecan Dip

Try this dip with sliced green apple, toasted rustic bread, or crackers.

Basil Chimichurri

In Argentina, garlicky chimichurri, a condiment as prevalent there as ketchup is in the United States, is spooned over all manner of grilled meats, especially steak. Make chimichurri at least 1 hour ahead to allow the flavors to meld.

Summer Bagna Cauda

Set out a dish of peppery extra-virgin olive oil with a dash of aged balsamic vinegar, Vincotto (sweet Italian vinegar), or verjus for dipping.

Carrot, Miso, and Ginger Salad Dressing

To achieve a uniform consistency, grate the carrot on the small holes of a box grater before pureeing in the food processor. We like to serve the colorful dressing in its own dish and let each person spoon some over a salad of butter lettuce, sunflower sprouts, sliced radishes, and edamame.

Ginger Pickled Beets

Serve these beets as part of a picnic platter or relish tray, or use them in sandwiches or salads. Golden beets work as nicely as red ones. Leaving beet tails and an inch or so of the stems intact helps minimize the loss of color (as well as flavor and nutrients) during cooking. Trim and peel the beets after they’ve been boiled; the skins will come off easily.

Marinated Baby Artichokes

These make a wonderful addition to any summer salad or antipasto. They can also be served as a side dish with roasted or grilled lamb.

Vietnamese Dipping Sauce

Known as nuoc cham, this Vietnamese table sauce is used to season dumplings, soups, and noodle dishes.

Tandoori Marinade

The yogurt in this traditional Indian mixture tenderizes what you’re marinating. Try grilling the meat or fish to add a smoky flavor.

Rosemary Balsamic Marinade

This goes remarkably well with steak.

Bread Pudding with Ham, Leeks, and Cheese

Using both Gruyère and fontina gives this savory dish complex flavor—and they melt beautifully. If you use only Gruyère, just double the amount. You can assemble most of this dish up to 1 day ahead and refrigerate, covered; then add the batter, and bake.
