Macaroni and Cheese with Mushrooms and Bacon

Stuart Faber of Los Angeles, California, writes: "When I'm not in my law office, I fly my own plane and write for In Flight USA, a magazine for private pilots. One of my favorite things to do when landing someplace new is to find a restaurant and ask if I can work for free. I've found some of my best recipes this way. Usually the chefs will let me hang out for a few days and help, but some do look at me a little strangely." A dressed-up version of a dinnertime classic.

Leslie's Red Pepper Soup

"My husband and I spent a weekend in Mendocino, and one evening out we were served a red pepper soup," says Leslie Cohen of Loomis, California. "Not being a red pepper aficionado, I was surprised at how delicious the soup was and vowed to replicate the recipe." Active time: 1 hr Start to finish: 1 1/2 hr

Mango and Mint Salsa

Begin with a ripe mango or ripen in a paper bag. First peel the skin off the mango. Slice it lengthwise on either side of the pit. This may be 4 slices. The pit may be oval. Use a serrated knife and proceed with the recipe.

Meat Loaf with Sauteed Mushrooms

Meat loaf has been a favorite throughout the century, especially during the 1940s when meat was rationed and ground beef was a bargain cut. We’ve put a contemporary stamp on this suppertime classic by adding lots of caramelized onions.

Spicy Cranberry Relish

Active time: 10 min Start to finish: 2 1/4 hr

White Bean Purée

This is an interesting alternative to potatoes. For the best flavor, try to find low-sodium chicken broth or use half water and half broth.

Apple and Sausage Stuffing

This delicious stuffing is similar to a savory bread pudding. It's best baked alongside, rather than inside, the bird.

Irene's Beer Stew

Tomatoes Stuffed with Guacamole

Tomates Rellenos Active time: 45 min Start to finish: 45 min Long before guacamole, tortilla chips, and Margaritas became a popular light dinner, guacamole was often served in tomatoes, and we were charmed by this presentation.

Arugula Salad With, Oranges, Pomegranate Seeds, and Goat Cheese

Dried cranberries can be used in place of the pomegranate seeds in this recipe.

Spicy Pico de Gallo

Lamb and Sausage Pie

Lard is the fat of choice on Majorca, but here we have substituted solid vegetable shortening in the crust, with equally delicious results. For a truly authentic version of this dish, use sobrasada, a sausage that tastes very much like Spanish chorizo but is much softer.
