Herbs & Spices

Broiled Lemon Thyme Pollock

Mayonnaise with lemon and thyme gives both extra freshness and a golden-brown crust to delicate, slightly sweet pollock.

Spanish Crusted Roast Pork Tenderloin

Crunchy on the outside, juicy on the inside, this pork tenderloin gets sultry flavor from smoked paprika, almonds, and Madeira.

Cranberry Vanilla Coffeecake

Vanilla is arguably one of the best scents in the world, and it permeates this tender cake in the form of a simple vanilla sugar. A zesty cranberry filling lies beneath the crumble top.

Jerk Beef on Plantain Chips

Shrimp in Dill Butter

In this marriage of give and take, shallot-dill butter makes jumbo shrimp taste as sweet as langoustines. In return, the shrimp impart their juices to the butter as they bake, creating a silky sauce. With toasted brioche in hand, you’ll want to sop up every last drop.

Apple Chutney

Applesauce goes global in a chutney spiced with ginger and red-pepper flakes. Tart Granny Smiths and sweet Galas are cut into chunks, giving this topping a firm bite. Fabulous over potato latkes, it’s also delicious with zucchini latkes .

Asian Chicken Hot Pot with Sesame and Garlic Dipping Sauces

For this interactive dinner, use a camping or induction burner at the table, or just get cozy around a warm stove. As the broth cooks the chicken and vegetables, it becomes a flavorful homemade soup.

Salt and Pepper Seasoning Mix

Muoi Thien Huong

Ginger Cranberry Sauce

Cranberries add sparkle to the meal.

Farmland Vegetable Pie

With all the amazing fresh produce available at this time of year, we always find ourselves facing the same dilemma: Which delicious, sun-warmed vegetable shall we choose tonight? But when food editor Ian Knauer threw the whole farm stand into a cornmeal crust, it took us only one bite to realize that he had solved the problem once and for all.

Grilled Chicken Breast with White Rosemary Barbecue Sauce

This recipe is perfect for a family reunion or any large summer gathering. If your party is being held at a park, be sure to bring charcoal, a chimney starter, oil for the grill grate, and a sturdy grill brush. These chicken breasts cook quickly, but let the coals burn down to medium-hot to cut down on pesky flare-ups.

Poached Eggs and Parmesan Cheese Over Toasted Brioche with Pistou

Pistou—France's pesto—gives these simply poached eggs tons of flavor.

Chocolate-Coffee Gingerbread with Hazelnut Poached Pears

This deep, rich cake gets extra flavor from bittersweet chocolate, coffee, and crystallized ginger.

Gingerbread Trifle With Candied Kumquats and Wine-Poached Cranberries

You’ll need a 7 3/4-inch-diameter trifle dish that is at least 4 3/4 inches deep. The recipe makes an extra gingerbread cake; have it for breakfast the next morning. If you prefer to make 12 individual trifles, use all three gingerbread cakes and cut each in half horizontally. Using a pretty glass as a guide, cut out 4 cake rounds from each cut cake layer. Alternate 2 cake rounds with 2 to 3 layers of the mascarpone cream, a few candied kumquats, and some poached cranberries in each glass.

Cinnamon Pecan Shortbread

When I was growing up, everyone put out bowls of toasted pecans during the holidays. To this day, the heady perfume of toasting pecans brings me back to my childhood. To capture that memory in cookie form, I made a buttery-rich, highly addictive shortbread, then decorated it with toasted pecans.

Spicy Cauliflower Latkes with Za'atar Aioli

The tiniest latkes on the menu, these are flavored with creamy cauliflower and spicy Aleppo pepper (a Syrian seasoning). Serve them with the aioli or just sprinkle them with za'atar.

Gingerbread Angels

When it comes to gingerbread, I almost always find that the allspice and cloves overpower the ginger flavor. To remedy that imbalance, I created a cookie with a double dose of ginger (ground and crystallized) and a little bit of cinnamon. And although the traditional cut for gingerbread is fat, sturdy men, I thought the lightness of angel wings seemed more appropriate for these delicate cookies.

Cheddar and Chive Yorkshire Pudding

Be sure to use whole milk and whisk the batter by hand (overbeating with an electric mixer may prevent the puddings from puffing and rising).

Rosemary and Brown Butter Applesauce

The traditional latke accompaniment is amped up with fragrant rosemary and nutty brown butter.
