Chicken Breasts with Cornmeal-Coriander Crust and Black Bean-Mango Salsa

Cornmeal adds a nice crispness to the coating for the chicken. The salsa and the Three-Pepper Slaw with Chipotle Dressing make this a colorful entrée. For drinks, mix up some tequila-lime spritzers by combining a little tequila with fresh lime juice and sparkling water, or uncork a bottle of dry Gewürztraminer.

Mocha-Chip Cookies

Chili-Seasoned Fish Sticks

This recipe can be prepared in 45 minutes or less. Put out a relish tray of sliced carrots, celery, gherkins and radishes, and serve sour cream mashed potatoes with the fish. Have lemon meringue tartlets afterward.

Chipotle Beef Chili with Lime Crema

A typical chili of the depression years consisted of cheap meat stretched by even cheaper beans. Chili remained modestly popular even when the hard times waned, until Lyndon Johnson boosted its national profile during the 1960s. Now chili is back and bigger than ever. Even with the modern addition of smoked jalapeños (chipotles), the inclusion of black beans and beer, and a stylish drizzle of lime crema, this recipe is a classic-hot, hearty and filling.

Cornmeal-Crusted Chicken Breasts

Here's a delightful variation on the fried-chicken theme, with cornmeal adding welcome crunch. To accompany the meal, serve white wine spritzers and fresh lemonade garnished with mint sprigs.

Buckwheat Crêpe Noodles with Chive Butter

Buckwheat — which grows well in cold climates — has a solid place in French-Canadian cuisine. Buckwheat crêpes can be traced back to Brittany, and buckwheat pancakes are a regular part of a Canadian breakfast. These "noodles," made from savory crêpes, are a contemporary twist on this classic dish.

Pumpkin-Seed Cheddar Corn Muffins

Warm Apple-Cornmeal Upside Down Cake

Yellow cornmeal in the batter adds great texture to this homey dessert. Top each piece of the warm cake with vanilla ice cream.

Summer-Fruit Shortcake with Mascarpone

Here's a recipe to have some fun with. Shortcakes are typically small and individually sized, but this is an impressive large cake filled with sweetened fresh fruit and whipped mascarpone. And unlike most shortcakes, this one is assembled ahead of time.

Pork Chops with Pecan Corn Bread Dressing and Cider Gravy

Blue Cornmeal Bread

"Coyotes Deli & Grill in Banff makes the most amazing blue corn bread," writes Donna Sanché of Toronto, Ontario. "My husband and I had dinner there not long ago, and enjoyed the entire meal — but the corn bread was definitely the highlight. I've told all of my friends about it, and now I'd like to make it for them." This sweet corn bread is best served warm. If you can't find blue cornmeal, don't worry: Yellow cornmeal works well, too.

Strawberry-Orange Ricotta Cake with Pistachios

Begin making this cake one day in advance.

Chocolate Cake with Caramel-Milk Chocolate Frosting

A classic chocolate layer cake with a new-fashioned, thick, and rich frosting. This treat can be made up to two days ahead.

Fried Clams

Food editor Melissa Roberts-Matar figured out what makes The Harrison's clams so special: the lightness of the coating. That's achieved by draining the buttermilk-soaked clams well and shaking off the excess coating after you dredge the clams. One restaurant touch that we loved was the delicious addition of fried thin lemon rounds and parsley sprigs; another was Joey Campanaro's accompanying Lemon Coriander Aïoli .

Malted Milk Ice Cream Cake with Blackberry Topping

Look for malted milk powder alongside the dry milk products in the supermarket.

Focaccia with Grapes (Schiacciata con L'uva)

Schiacciata means "flattened down," and in Tuscany the term generally refers to flatbread—what everyone else in Italy calls focaccia. During the wine-grape harvest, Tuscans make a not-too-sweet dessert or snack of bread dough and grapes, said to be of Etruscan origin. Realistically, at this time of year in the United States it will be hard to find a grape flavorful enough for this recipe. If you can't find great grapes, save this recipe for next autumn, when Concord grapes are in season, and substitute the almond cookie recipe.
