Date-Nut Bread with Lemon

Toast a slice of this bread, and serve it with butter or cream cheese for breakfast.

Chocolate-Orange Fruitcake with Pecans

The perennial Christmas gift gets a luscious face-lift in this impressive cake. We guarantee that it won't get shuffled around, and no one will make any jokes about it. Store the cake in the refrigerate for up to three weeks before giving. Wrap it in some red or green cellophane, and present it in a decorative box (a hatbox is fun) tied with a big, bright bow.

Steamed Pumpkin Bread with Walnuts and Dates

Ken Haedrich, cookbook author, says, "Since moving to New England nearly twenty years ago, I've heated the house with wood-burning stoves. And because our big Thanksgiving gatherings put oven space at a premium, I've often pressed those stoves into backup duty. That's how steamed breads—which can be cooked on top of the stoves — came to be a regular part of our feast. This steamed pumpkin bread provides another way to bring good pumpkin flavor to the meal, too. I also serve my special crescent rolls on the big day. One year, my kids let it be known that they wanted croissants on Thanksgiving, but that seemed like a bit more work than I could handle. Instead, I came up with these sesame crescents—croissant-like rolls with savory onion filling. I guess they did the trick, because nobody says much about croissants anymore. Plus, I can make the crescent rolls two weeks ahead and freeze them. That way, they don't take up any of that precious oven space." Note that this bread needs to cook in an empty 28-ounce food can (such as the kind used to hold whole tomatoes).

Rustic Apple Tart with Honey, Dates, and Nuts

Raw sugar crystals (sold at natural foods stores and some supermarkets) are baked onto the edges of the free-form crust.

Quince-Date Chutney

The flavor of this chutney improves if made at least one day ahead. Serve with: Indian dishes (such as basmati rice and curries), lamb, duck, pork chops, or sharp cheeses.

Orange Date-Nut Diamonds

Orange syrup sweetens the cake and the fresh fruit that goes with it.

Modern Waldorf Salad

The traditional apple, walnut and chopped celery salad is updated with a yogurt and low-fat mayonnaise citrus dressing, pine nuts and Cajun seasoning.

Orange and Date Baklava

This version of the Greek and Turkish dessert features dates instead of nuts. Date palms flourish in the hot climate of the Middle East.

Moroccan-Style Cornish Game Hens

The hens should marinate at least 12 hours, so begin preparing a day before serving.

Sticky Toffee Pudding

"I have never had a better dessert than the sticky toffee pudding at Beginish Restaurant in Dingle, Ireland," writes Judith Gilbard of Forest Hills, New York. "I hadn’t heard of the restaurant before this visit, so I was pleased to stumble across such a find. Do you think the owners, John and Pat Moore, would share their recipe?" At the restaurant, this dessert is served with a scoop of vanilla ice cream.
