Michael's Antipasti

Serve this with crusty bread to soak up the delicious olive oil.

Roast Duck Soft Tacos

You've never seen these on the menu at your local fast-food Mexican restaurant, and you probably never will. One of the joys of cooking is that leftovers can be used to create better meals than most people get when they eat out. These tacos are remarkably simple to make. Just put the various ingredients in their own serving containers on the table and let everyone serve themselves.

Sauteed Halibut with Lemon-Vegetable Relish

Salmon and cod also work well.

Sofrito Grilled Bread

Sofrito is a sautéed vegetable mixture used as a seasoning in much of Latin America and the Caribbean. It typically contains garlic, onion, bell pepper, coriander, and sometimes tomatoes or ham, although the recipe varies among countries. In our version, we've omitted the oil normally used to cook the ingredients and instead simply puréed the vegetables. This recipe was created to accompany Grilled Citrus Salmon. Can be prepared in 45 minutes or less.

Chicken on a Skewer (Yakitori)

Yakitori at its simplest is a chicken shish kabab with a very Japanese flavor. Pieces of dark meat are served either by themselves, neatly speared onto the ends of small bamboo skewers (three makes a serving), or interspersed with bits of green bell pepper or scallion. As the meat is grilled, it is dipped into a sweetened soy-based sauce. The servings are tantalizingly small, but you can have as many as you want. If you are hungry enough for a full meal, you can serve yakitori on a bowl of rice with tea and pickles on the side.

Poblano Chile Sauce

This sauce can be prepared with yellow bell peppers instead of poblano chiles. Both sauces go equally well with the chicken-and they also complement each other nicely. So follow your mood: earthy poblano or sunny, sweet yellow bell pepper-or make half a recipe of each and serve them both. This recipe can be prepared in 45 minutes or less.

Zucchini Relish Wiley

Stuffed Baby Bell Peppers

You can use 4 small regular bell peppers (1 1/2 lb total) instead of the 24 baby bell peppers, but you'll need to make 1 1/2 times the filling.

Cheddar, Onion, and Red Bell Pepper Souffléd Omelet

We tested this recipe with a variety of cornmeal brands, all of which worked fine. Do not substitute polenta, however; it made the soufflé much too heavy.
