Aunt Enza's Overstewed Green Beans

I, who struggled for years to achieve perfectly cooked, lively green beans love Aunt Enza's overstewed green beans, soft, almost creamy, tasting of bean, cooked far beyond crunch. Although Aunt Enza cooks the green beans in an onion and garlic-flavored tomato sauce she pointed out that leftover green beans can be subjected to the same treatment. Aunt Enza has a heavy Tuscan hand with extra virgin. I've cut down on the oil but my husband Massimo always adds a little extra at the table.

Steamed Sole with Black Bean Sauce

One of the secrets of steaming sole is to season the fish just before cooking. If the fish sits too long with the seasonings, the salt will extract water from the fish and, consequently, the fish will be less juicy. Try to choose a fish not longer than 14 inches, so that it will hang over the plate by no more than 1 1/2 inches on each end but will still fit in the steamer. It is not necessary to purchase lemon sole for this recipe; just be sure the fish is very fresh and has the head and tail intact.

Clearly this is an Italian soup. Biete is Swiss chard, usually green, although I have a fondness for the drama and beefy taste of the red-stemmed kind.

Make the omelets one at a time and serve them immediately (they will dry out and lose their tenderness if you try to keep them warm in the oven).
