Jambalaya

This Cajun dish is so associated with good times that Hank Williams named a song after it. The original isn’t so good for you, though. I made a few changes to the classic to make it easier to prepare—and much healthier. White rice has been replaced with brown, and much less fat is used to cook the vegetables and meat. Feel free to improvise by adding chicken, fish, or vegetables.

Cheddar Cheese and “Potato” Soup

If ever there was a dynamic duo of destructive caloric forces, cheese and potatoes is it. But they taste sooo good together, we dive in anyway. This potato-free cheese and “potato” soup reunites the duo but tames them to a mere shadow of their former fatness.

Broccoli and Cheese Soup

This beautiful green soup features broccoli two ways—pureed for body and in chunks for texture. The cheese in this rendition of broccoli-cheese soup is a whisper of Parmigiano-Reggiano cheese. The real creaminess comes from yogurt.

Red Cabbage with Chestnuts

This is one of my favorite winter Alsatian vegetable combinations, and a common winter vegetable dish of French Jews. It is best made a day in advance and left to meld the flavors. Serve as an accompaniment to roast goose, chicken, or duck.

Southwestern Saffron Risotto with Meat and Mushrooms

This risotto recipe from Natan Holchaker, a retired dentist and food hobbyist in Bordeaux, includes smoked goose breast. If you cannot find a kosher version, substitute smoked turkey breast.

Provençal Lamb with Garlic and Olives

Michel Kalifa is one of the few butchers in France who go through the laborious process of removing the many veins in a leg of lamb, a process that is integral to koshering. Because of the difficulties in koshering a leg of lamb, most people will use the shoulder, which he loves as well. Glancing lovingly at his wife, he said, “A thigh of a woman is as nimble and light as a shoulder of lamb.” Here is an old Jewish Provençal recipe for a shoulder of lamb. Make it, as Michel Kalifa would, with a caress of garlic.

Brisket with Ginger, Orange Peel, and Tomato

To the Horror of chef Daniel Rose (see page 68) of Spring Restaurant in Paris, it is impossible to find an American brisket in France. It just doesn’t exist. American butchers tend to cut larger pieces of meat. Five- or six-pound briskets (poitrines) or huge rib-eye steaks (entrecôtes) are the result of sawing through the muscle or the shoulder section of the animal. French butchers, by contrast, cut around the contours of the muscles to yield more tender but much smaller pieces. French Jews tend to use a breast of veal that usually has a pocket inside it for stuffing for their brisket. In this version, Daniel applies French techniques to make a perfectly delicious brisket with a subtle hint of orange in the sauce. I always make this dish a day in advance.

Southwestern Cassoulet with Duck and Lamb

Fava beans and chickpeas were brought to France in the thirteenth century with the opening of trade routes by the Crusaders. Before white beans came from the New World, the French used fava beans for cassoulet and called it févolade. Cassoulet could well be a variation of the overnight Sabbath stews such as dafina or hamim, which means “warm.” Cassoulet could also have come from the Arabs, who made a similar dish, skeena. All I know is that, in a land where there is lots of pork, in a land where the Jews played a role in developing the art of fattening goose livers, cassoulet looks suspiciously like the ubiquitous Sabbath stews, and often has no pork in it at all. This cassoulet calls for lamb shoulder and a great deal of duck or goose fat instead in which to cook the duck legs and sausage and lamb (it is not all consumed). You can use vegetable oil, but it will not taste the same. E-mail Aaronsfood@aol.com for a place to obtain rendered kosher duck fat, or roast a duck and make your own.

Moroccan Tagine of Chicken with Prunes, Apricots, and Almonds

In the heart of Dijon, at the Municipal Museum, right next door to the majestic stone kitchen of the dukes of Burgundy, Alette Lévy checks coats. Once the owner of Dijon’s only kosher butcher shop, she talks food between customers, such as this chicken-tagine recipe she makes for her French friends. The trick to this recipe is to put the almonds in the microwave for 3 minutes, to make them crackly. This way you don’t run the risk of burning them, the way I always seem to do when I forget them in the oven or frying pan. Alette told me you can substitute lamb for the chicken.

Poulet à la Bohémienne

This is one of the down-to-earth recipes Baroness Rothschild loves. When I made the dish for a friend, he said that, like stuffed cabbage, this Bohemian chicken recipe tasted better on the second day. Holding it only enhances the flavor, making it a perfect dish for Shabbat.

Tagine au Poulet et aux Coings

While her husband was on a fall Sunday ramble with friends, Anne-Juliette Belicha gave me a cooking lesson in their fifteenth-century house overlooking the fields in the Dordogne countryside. The house is located on the outskirts of Montagnac, right near the caves of Lascaux, renowned for their prehistoric animal paintings. In the kitchen hang photos of the woman who owned the house at the turn of the century, who tended geese for foie gras and to provide goose fat for the winter. Because quinces were in season, Anne-Juliette decided to cook us one of her Algerian husband’s beloved Rosh Hashanah dishes, from a book that is also one of my favorites—150 Recettes et Mille et Un Souvenirs d’une Juive d’Algerie by Léone Jaffin. The quince, believed to be the Biblical “apple” of the Garden of Eden by some scholars, is a complex fruit. Hard to peel and quarter, quinces require careful handling. Once peeled, they darken rather quickly, so you need to keep them in water mixed with a little lemon juice. Anne-Juliette picked the quinces from a friend’s tree and used an old variety of onions—a cross between onions and shallots—that she bought at a nearby farmers’ market. As she cooked, first frying the onions and then the kosher chickens that she buys in Paris, she told us about her dream: to open a kosher bed-and-breakfast in the Dordogne.

Cabbage Stuffed with Gefilte Fish

Every year at passover, I make too much gefilte fish. In fact, when I made gefilte fish one year with Jackie Lyden on National Public Radio’s All Things Considered, I used 27 pounds of fish! Hadassa Schneerson Carlebach, a fascinating woman (see page 140) who worked with her late father making and providing matzo and other kosher food for observant Jews in detention camps in France, gave me this recipe for gefilte-fish-stuffed cabbage. Flavored with slowly cooked peppers and tomatoes, it is a great way to use up leftover patties. Even avowed gefilte-fish detesters love this dish. A cooking tip: I put the cabbage in the freezer for two days, defrost it for a day, and then use the limp leaves to wrap the fish.

Salmon with Pearl Onions, Lettuce, and Peas

As a sign of spring, this salmon dish, made with the first peas of the season, has been handed down from generation to generation since the first Jews left Spain during the Inquisition. I tasted it in Biarritz, at the lovely villa of Nicole Rousso, who comes from a Portuguese merchant family from Bayonne.

M’soki (Tunisian Passover Spring Vegetable Ragout with Artichokes, Spinach, Fava Beans, and Peas)

When Dr. Sylviane Lévy (see page 65), a physician in Paris, got married, she had a Passover dilemma. Her husband’s Tunisian family ate m’soki, a verdant soupy ragout with spring vegetables—like artichokes (considered a Jewish vegetable), spinach, and peas—and meat; her family, originally from Toledo, Spain, and later from Tétouan, Morocco, ate a thick meat- and- fava- bean soup. So which did she choose? Instead of picking sides, she serves both at her Seder. Now her grown children associate these soups with the taste of home. M’soki, also called béton armé (reinforced concrete) because of its heartiness, is so popular in France today that Tunisians, Algerians, and anyone who has tasted it now prepares it for Passover, and at special events throughout the year. This very ancient soup, probably dating from the eleventh century, would have included lamb, cinnamon, rose petals, and white or yellow carrots. It would not have included harissa, as peppers were a New World import.

Arroz con Pollo with Salsa Verde

In translation, arroz con pollo simply means “rice with chicken.” When I was the chef at Cafeteria, the Latin American cooks made this dish for our staff meal just about every day. Its truly authentic flavors are homey and satisfying. I prefer using whole canned tomatoes and crushing them by hand because I have more control of the texture; plus the flavor is a lot better than chopped canned tomatoes.

Lamb Curry

For me, commercially produced curry power tastes just that: commercial. You would never find prepared curry powder in an Indian restaurant, and because the spices are combined fresh, the flavors are robust and explosive. If you like a light curry flavor, use half the spice mix. If you like a spicy curry—use it all. I won’t be mad at ya. Serve the lamb curry with Perfect Steamed Jasmine Rice (page 240) or basmati rice. This is Bombay the right way.

Beef Bourguignon

In culinary school, beef bourguignon is one of the first dishes you’re taught that truly represents French cuisine. It’s basically beef stew with a deep red-wine flavor. The kicker is that it’s one of the easiest recipes in this book. Serve this with creamy mashed potatoes and I swear you will feel like Paul Bocuse, and you don’t have to go to cooking school.

Pat's Deep-Fried Cornish Game Hens

I love Cornish hens: baked or smoked, but also deep-fried. To me they're like smaller turkeys, so they're perfect for entertaining smaller groups or just your family. If you can't find them at your butcher counter, check the frozen-meat section—just be sure to let them thaw out completely. Because of their small size, you can use an electric fryer instead of the larger turkey contraptions for deep-frying them (another bonus). Deep-fried, they've got a golden crust and a juicy, juicy tenderness. If you're short on fridge space, divide the marinade between two or three large zip-top bags, and divide the Cornish hens among them. Press the air out and seal tight; then you can fit them into a smaller space. Now, Shelbi and Gina might share a hen, so for light eaters just split one bird down the middle. But a heavy eater like me will eat a whole hen. I've been anticipating it all day!

Wild Blueberry Steamed Pudding

This is a treat best enjoyed from July to October, when one's pail of freshly picked wild blueberries runneth over. The wild blues that stud this fluffy cake greet the eye like so many sparkling jewels plucked from a maharajah's box. It's a lovely cake to bake in the glowing embers. Set it to cook as the main course is served and, as if by magic, it will be ready by meal's conclusion.
