Crab Gratin with Potatoes, Leeks, and Spinach

Scalloped potatoes was one of my favorite childhood dishes. I’ve added the classic combination of crab and spinach to this version and lightened the sauce a bit by using milk instead of cream. You can substitute shrimp or lobster meat for the crab.

Chicken Toscana Cooked Under Bricks

Roasting chicken under bricks creates an evenly golden skin and moist, succulent meat. The bricks keep the chicken weighted down and somewhat flattened, which allows it to cook evenly and more quickly than if roasted whole. Brining the chicken keeps the flesh moist. Any number of vegetables can be roasted as part of this dish, but I prefer just tomatoes and shallots.

Spit-Roasted Leg of Lamb with Tzatziki

This great-tasting dish from Joanne Weir takes you back to medieval times and spit-roasting at the hearth. You can also roast it over a grill or roast in an oven. This version is flavored with Greek herbs and served with a yogurt-cucumber sauce. Accompany with Pita Bread (page 44).

Smoky Seafood Paella

In Spain, the native land of paella, this classic dish is often prepared over a live fire. Georgeanne Brennan and I adapted this recipe from The Mediterranean Herb Cookbook on a wood-fired grill at her home, using onions, garlic, peas, and fresh herbs from her garden. You can use fresh or frozen calamari. The quality of the ham and chorizo is very important, so shop for the recommended types. If you can’t find them in your local store, shop online at The Spanish Table or La Tienda (see Resources). One of the secrets to this dish is that the herbs are added in layers. The second secret is to cook it over a wood fire!

Cheese and Prosciutto Panini with Smoky Romesco Sauce

Panini are pressed and griddled Italian sandwiches that can be filled with any number of simple fillings. They can be made with focaccia, soft rolls, or other breads. My favorite bread for this nutty, smoky combination is multigrain. Smoky Romesco Sauce flavors the bread and is also used for dipping.

Over-the-Coals Bistecca Fiorentina

In this campfire version of an Italian classic, the steak is cooked on the coals, though bistecca fiorentina is traditionally cooked on a grill over the coals. Of course you can make it on a very hot grill or griddle pan if you choose, but it’s fun to watch your steak cook directly on the coals. Choose the best steak you can afford. Add a side of creamy White Tuscan Beans with Sausage (page 119) and you’ve got a magnificent yet simple meal. Buon appetito!

Salade Niçoise with Spring Vegetables

Salade niçoise is traditionally a composition of tender seasonal lettuces, green beans, baby potatoes, olives, and the best-quality tuna packed in olive oil. This version features tuna steaks grilled perfectly, then broken into chunks. You can substitute your favorite seasonal vegetables if you choose. This salad should not be chilled.

Spanish-Style Potato Salad with Saffron-Aioli Dressing

Who doesn’t love crispy, salty potatoes? This simple Spanish-influenced dish is a fine accompaniment to grilled fish. The saffron-scented aioli dressing is also wonderful tossed with pasta or on other seasonal vegetables. This dish is even more stunning when made with Peruvian purple potatoes.

Grilled Panzanella with Heirloom Tomatoes

Panzanella is a rustic Italian bread salad, created to use leftover bread. The vibrant tomatoes add moisture to the stale bread for a great summer main course or side dish. In this version, the bread is grilled for extra flavor. If your tomatoes are not at the peak of flavor, grill them, cut side down, until marked to bring out their natural sugars. Cut them into chunks and toss in the dressing before adding to the salad.

Grilled Duck Breasts with Lavender-Herb Rub

A rich, fragrant dish, these duck breasts are perfumed with the aromatics of southwest France, then grilled to crisp the fatty skin. Served sliced and fanned over tender baby greens lightly dressed with citrus vinaigrette, this is a wonderful dish to serve as a first course or as a light main course.

Grilled Flank Steak with Red Peppers and Fontina Cheese

Italian cuisine often features stuffed and rolled meat or fish. This recipe uses inexpensive yet flavorful flank steak. Pounded chicken or turkey breast, pork loin, or fish can be substituted. The grilled rolls are sliced into beautiful spirals and serve with gremolata reserved from the stuffing and a wonderful wood-roasted wine sauce.

Tuscan Grilled Pizza with Escarole

Cookbook author Joanne Weir is known for her flavor-packed Mediterranean-inspired food. Her book From Tapas to Meze shows the breadth of her Mediterranean influences. Here, Joanne shares a favorite pizza recipe that we adapted for grilling using a Tuscan grill that fits into the fireplace of her home in San Francisco. The bitter escarole on this pizza is balanced by the sweet pine nuts, creamy cheeses, and the salty olives. The dough for a grilled pizza needs a bit more structure from gluten to keep it from oozing through the grates of the grill, which is why this one is kneaded for a longer time than other pizza doughs.

Baguette Pain a l’Ancienne

Peter Reinhart is a well-known cookbook author; his Crust and Crumb, The Bread Baker’s Apprentice, and Whole Grain Breads have been graced with prestigious awards. At Ramekins, where he occasionally teaches bread classes, Peter and I baked bread and pizzas together in the wood-fired oven after his last class. This recipe came from his The Bread Baker’s Apprentice. It is an amazing formula that can be turned into baguettes, ciabatta, focaccia, and pizza. That baking session was about a lot more than the recipe. It was about the primary message of this book: joyfully cooking and sharing with others at the fire.

Spanish Coca with Smoky Romesco and Potatoes

Coca is the Spanish version of pizza. Here, it is spread with my Smoky Romesco Sauce, a basic in the Spanish pantry. When topped with green onions, roasted potatoes, and sliced hard-cooked eggs, it is an edible canvas of the sunny colors and flavors of this part of the Mediterranean.

Pita Bread

Though pita bread is made throughout the Middle East, we have come to identify it with Greece. When baking, it puffs up like a small balloon and then deflates when removed from the oven. This version has a bit of whole-wheat flour in it for extra nuttiness and added flavor. Make a batch or two ahead and freeze some to use later; these pita reheat easily. Try these filled with strips of roasted Mustard and Lemon Chicken (page 92) and topped with a dollop of Greek yogurt.

Pizza al Forno with Mushrooms, Gorgonzola, and Radicchio

This pizza could be named Umami Pizza because it features the earthy flavors of mushrooms and Gorgonzola cheese. The radicchio provides a slightly bitter flavor for contrast and adds color. Sautéing the mushrooms and garlic in the wood-fired oven adds an additional layer of flavor.

Calzone with Sausage, Spinach, Fontina, and Pine Nuts

This is one of my favorite savory calzones because the filling is so delicious. The sausage and onions become smoky because they are first cooked in the wood-fired oven. Spinach is a natural with these two ingredients. The creamy, slightly nutty fontina cheese is a great companion to the toasted pine nuts. This combination would be wonderful on a pizza as well.

Focaccia with Oven-Roasted Tomatoes, Ricotta Salata, and Basil Oil

Focaccia is one of the easiest flatbreads to make: No shaping is needed because the dough is stretched and spread out in the sheet pan. This recipe uses a very wet dough, resulting in a moist flatbread about 3/4 inch thick. You can substitute shavings of Parmesan for the ricotta salata cheese, if you like. Focaccia is best eaten the day it is baked.
