Kerala Boatman's Crab Curry

A narrow strip of land at the southwestern tip of India, the state of Kerala is interlaced with a network of lagoons, canals, lakes, and rivers. Peddlers sell fish from these waters and other food by boat along the canals. This curry is styled after the ones these boatmen cook for themselves. It incorporates many ingredients of the Kerala kitchen: black peppercorns, fiery red chiles, mustard seeds, and the ubiquitous coconut. In India they toss about 20 fresh curry leaves into the kettle along with the onion, garlic, gingerroot, chiles, and peppercorns. These aromatic leaves can be difficult to find in the U.S., but if you locate some, by all means use them.

Vegetable Green Curry

The sweet potato and coconut milk balance the spiciness of this dish. Serve it over white rice, and dinner is ready.

Shiitake Bok Choy Soup with Noodles

This recipe can be prepared in 45 minutes or less. Editors' note: The original recipe calls for Chinese wheat noodles, but we also like this soup made with somen (Japanese thin wheat noodles) or soba (Japanese buckwheat noodles).

New Year's Cake (Neen Gow)

Neen Gow, New Year's Cake, is the most important cake eaten on New Year's — the main ingredient, glutinous rice flour, is a symbol of cohesiveness. The egg-dipped, pan-fried slices have a mellow sweetness and are slightly chewy from glutinous rice flour. Mama remembers watching her grandmother's servants scraping the slab brown candy, peen tong, for this cake, which is the traditional technique. Brown candy is a kind of sugar that is sold by the slab in 1-pound packages and is also available loose in bins in some Chinese markets. The slabs are about 5 inches long, 1 1/4 inches wide, and a scant 1/2 inch thick. The scraping of the sugar is extremely labor-intensive, so some cooks dissolve the slabs of sugar in water, which is less authentic but much easier to prepare. Green Papaya Salad

Anywhere you go in Laos, you will find women patiently preparing papaya for this salad. Using a small machete-like knife, they make repeated shallow parallel cuts, each about 1/8 inch deep, in a section of the papaya. Then they scrape the papaya from top to bottom so they end up with very nice julienne. A food processor fitted with the julienne disk or a manual slicer such as a mandoline works equally well.

We were intrigued by the flavored cooking oil, ginger soy sauce and curry paste we found in the Asian foods section of the market last year, and used them to lend flair to this quick dish. Steamed white rice is the ideal side. Use a melon baller to scoop papaya, mango and passion-fruit sorbets into pretty cups, and garnish with crisp ginger cookies.

Grilled Lemongrass Beef and Noodle Salad

This Vietnamese classic is usually made with top or bottom round beef, which is sliced and then marinated and grilled. We've adapted the recipe to use skirt or flank steak and made it easier by grilling the meat before slicing it.

Sea Treasure Clam Miso Soup

Miso soup — a fermented-soybean broth — is not difficult to make at home. Freeze the ginger and thaw it before squeezing; that way, extracting the juice will be easy. Chilled sake goes well with the meal.
