Eggplant and Oyster Rice Dressing

What northerners call stuffing, southerners call dressing. Oysters and eggplant are a classic Louisiana combination, and the bite of cayenne adds to the authenticity. Active time: 1 hr Start to finish: 2 1/2 hr

Cornmeal Biscuits

Can be prepared in 45 minutes or less.

Ranch-Style Poquito Beans

Poquitos are small, pinkish-brown beans indigenous to the Santa Ynez region. Dried pink beans are a good substitute.

S'mores à la Anago

Red and Green Endive and Walnut Salad

Can be prepared in 45 minutes or less.

Cherry-Almond Bars

A bowl of fresh fruit and some mixed nuts would be very nice go-withs here.

5x Onion Salsa

Here's a perfect partner for turkey or veal burgers, sausages and toasted French bread.

Todd English's Backyard New England Clam Bake

Todd English — the chef/owner of Olives and the four Figs restaurants, all in and around Boston — was named Best Chef in the Northeast by the James Beard Foundation. He's also the author of two cookbooks. For his "clambake" extravaganza, you'll need a grill with a lid.

Poblano Chile Sauce

This sauce can be prepared with yellow bell peppers instead of poblano chiles. Both sauces go equally well with the chicken-and they also complement each other nicely. So follow your mood: earthy poblano or sunny, sweet yellow bell pepper-or make half a recipe of each and serve them both. This recipe can be prepared in 45 minutes or less.

Peach Melba Cream Cake

I line the buttered pans with buttered wax paper, then flour them, to make unmolding the cakes easy after baking.

Sesame Seed-Peanut Brittle Coupes

Peanuts are a huge crop in the South, especially in Georgia, and peanut-molasses brittle is a favorite treat. Sesame seeds-called benne seeds by southerners-are popular in Charleston. Brought to this country in the late 1600s by slaves, today the seeds are used in many specialties, including the famous benne seed cocktail wafers and a luscious brittle. We make our brittle out of both peanuts and benne, then crush it and sprinkle it over ice cream or frozen yogurt.

Watercress Salad with Green Goddess Dressing

Can be prepared in 45 minutes or less.

Grape-Nuts Ice Cream

Many New England restaurants offer Grape-Nuts pudding for dessert, and several of the best ice-cream parlors make Grape-Nuts ice cream. The crunchy cereal becomes a soft savory note in sweet vanilla-flavored cream.

Vietnamese-Style Grilled Steak with Noodles

Can be prepared in 45 minutes or less. Editors note: This recipe was written in 1991, before Southeast Asian ingredients were widely available. For a more authentic take on the dish, substitute rice noodles for the capellini or thin spaghetti. (To cook: Soak the rice noodles in a large bowl of cold water for 15 minutes, then drain the noodles, and boil in salted water until tender, 1 to 2 minutes. Drain the noodles, rinse under cold water, and drain again.) You can also replace the dried hot red pepper flakes with an equal amount of sambal oelek, and use 1 1/2 tablespoons (or more to taste) fish sauce in place of the soy sauce and anchovy paste. Also: Feel free to use flank or skirt steak in place of the shell steak, adjusting the cooking time as necessary.
